Melt in Your Mouth Roast Chicken



This Chicken Recipe is the BEST!! It smells so good while its baking in the oven and tastes even better when its on your plate! This recipe is great for dinner parties and is served wonderfully with watercress, potatoes and carrots or string beans. Here are the Steps:

{Ingredients}
4-5 lb whole chicken
salt and fresh ground black pepper to taste
3 lemons, halved
4 sprigs thyme
2 sprigs rosemary
6 cloves garlic, crushed, unpeeled
1 onion, sliced

1 Tblspn on Butter
olive oil as needed
1 cup chicken stock or broth
1/2 cup of water
(Any veggies you want to place around the chicken, I chose Carrots)

The Ingredients you will need
{Directions}

Preheat Oven to 400 degrees. Wash and dry the chicken, and throw out all the unwanted giblets. Mix the Thyme, Rosemary, Lemon Juice and Garlic in a Bowl. Smother the Chicken in the Juices and then place the remaining mixture inside the chicken. ( I didn't have time to run to the store to get real lemons or leaves so I just used my lemon juice and pre-made seasonings). Tie the two legs together with the cooking string (this is optional). In the bottom of the Roasting pan put the 1 cup of chicken broth, 1/2 cup of water and sliced onion (and optional veggies). Pour the rest of the juice from the seasoning bowl in the pan. Rub the chicken with the butter and place into the roasting pan. Drizzle with some olive oil and sea salt (generously) and then place it in the oven! Cook for 1 hour and 15 minutes at 400 and then reduce the heat to 175 degrees and cook for 15 minutes. Make sure to be basting the chicken every 15 minutes to get a nice soak :) Internal Chicken should be at 165 degrees when it is finished. You can also make the leftover juices at the bottom of the dish into a nice gravy. Bon Appetit!

:Slow Cooker-Chicken Drumsticks




This Recipe is easy to do and tastes great with a side of rice and steamed artichoke. Here is the Recipe:
{Ingredients}
  • 4 pounds or 8 Chicken Drumsticks. SPICES: 2 tsp. salt,1 Tbsp. paprika,2 tsp. chili powder,1 tsp. onion powder,1 tsp. thyme leaves,1/2 tsp. garlic powder,1/2 tsp. black pepper, 1 cup of water or chicken broth, Olive oil and foil for crumpling up in crockpot 
{Directions}
  • Wash and pat dry the chicken breasts. Mix all the spices together in a bowl. Rub the spices onto the chicken. In a skillet heat the olive oil on medium/high heat. Quickly brown the chicken on all sides.
    • **TIP: Browning the meat before putting it in the crockpot helps keep the juices to stay inside the skin
  • Spray pam in the slow cooker and crumple tin foil up into balls and place inside. Pour 1 cup of water or chicken broth in the crockpot. Put the chicken on top of the tin foil and cook on low for 4-5 hours. Enjoy!

Teriyaki Chicken Kabobs & Roasted Artichokes


 This recipe is one of our all time summer BBQ favorites! The chicken is marinated the night before (or the morning of) and tastes super juicy and delicious! My stomach is growling as we speak!

The Artichokes are seasoned with Butter, Lemon Juice, Garlic Salt, Onion Powder, Oregano and Rosemary. I dip them in a melted Mayonnaise, Butter and Lemon Juice mix.
